It is the lacy, net-like aril that surrounds the seed kernel of nutmeg, Javitri has a bright red, lace-like appearance when whole. It’s typically sold in dried whole blades or ground form. The flavor of Javitri is similar to nutmeg, but it’s more delicate and slightly sweeter, with hints of cinnamon and pepper.
When choosing javitri, look for whole blades that are bright red and have a strong, fragrant aroma. Avoid dull-colored or broken pieces. Store javitri in an airtight container in a cool, dark place. Whole mace will stay fresh for up to a year, while ground mace loses its potency much faster and should be used within a few months.
